Advertising?

I must apologize for the recent advertising. I thought this would be the perfect tool for communicating with our customers. Not only to list the specials but to talk about the product in more detail. Source, flavor profile, etc. A great learning experience for all of us. I'll continue my random rants and other BS. as usual as well.

I'll list special event info and anything worth note going on at our restaurants.

I think you'll be seeing more of this type of communication with restaurants in the future. I don't know of anyone who is doing it.

I'll locate posts specific to the restaurants as a side element. It's where this weekend specials are located now. The down side to locating it there is you won't be able to "comment". I'll happily answer any questions if you e-mail me. I'm an early riser and get computer time early mornings.

Yellow Rose News

The lunch and dinner menus have been updated at The Yellow Rose. The big difference being price. We've lowered prices considerably. The downtown market has been sluggish so as an incentive to visit TYR we've lowered prices. We also are including a house salad with all dinner entrees.

TYR website will be updated soon.

I still think it's the best lunch in town and the most underrated restaurant in town. Most of the items now come with a choice of sides.

Quick Update

Flying some great stuff in from Hawaii this week: Beautiful Big-Eye tuna and sword fish.
I'm also going to bring some stuff in from the Pacific northwest as well.

Menu tweaks on the way for both restaurants.

Observations

The steelhead was gorgeous. I ordered two more for the weekend. I ran them bathed in a light black trumpet cream broth. The trumpets are extremely flavorful. Shaved a little Bianchetti truffle into the broth. Jade rice and gently sauteed spinach. It was killer. I'll probably run it this way through the weekend.

The razor clams were surprisingly big. Ran them last night and will save the remainder for the weekend. Very sweet. Almost scallop-like in flavor.

The 140z bone-in filets were very nice. The bone was a little big in my opinion. I'll shop around and see who has the best steak and trim. I really like the idea and it sold well.

The Bianchetti truffles are interesting. They are an Italian spring truffle just coming into season. The French black truffles are coming to an end and are up to $1100.00 per pound. The Bianchettis were half that.

I love watermelon radishes. I was using them as a garnish on the salads last night. Tonight and this weekend they will be included in the bento box.

New plates and stuff coming today. Including bento boxes. A Japanese square plate that's broken up into compartments. I'll serve an combination appetizer in it. Some sushi, oysters, scallop, (scallop and truffle? mmmmm!) radish etc.

Someone Asked 02/27

Wild Steelhead Trout
Similar to salmon, this fish was caught yesterday in Washington State and “over-nighted” to us.

Cedar roasted, bathed in a black trumpet mushroom nage with Bianchetti truffle shavings (Italian spring truffle) and sautéed spinach. $26.00

14 oz. Bone-In Filet Mignon
Served with demi-glace, béarnaise and truffled mashed potatoes. $38.00

Razor Clams
Harvested from the beaches of the Pacific Northwest. Unsurpassed in their sweet flavor. Called razor clams because of their sharp shells that resemble a
straight edge razor.

Breaded with panko bread crumbs, quickly fried and served with lemon and aioli. $9.00
