White Trash Tongs

To Michael, what ever the fuck your name is........Dude, I may use "white trash tongs" but you can bet your ass that when it's go time I'm showing up and have been for a long, long, time with my tongs. You elitist piece of shit.

White trash tongs refers to the old school traditional cook's tongs. In today's modern kitchens they are often banned by the elitist young chefs who have been taught they damage the product. It's true but only in the hands of a journeyman.

I'm sorry, but there is something that doesn't quite add up: if the "elitist young chefs (...) have been taught [the tongs] damage the product" why do you blame the young chefs and not the, presumably older, chefs who taught them that?
Is it really elitism when you follow what your mentor has taught you?
And is elitism so much worse than ageism?

It's there inability to recognize on their own what "just might work". To literally ban a tool is just short sighted and ignorant. If the practitioner is unable to master the tool then take it out of HIS hands and not the ones who are able to recognize the nuances of the instrument.

Their instructors are probably remfs andhaven't experienced what the real world is like or they are just going with the trend. (Trend may be a stretch because the whole snobbery stems from the Europeans.) My mentor used to admonish me for using a tong when he first got to this country. It took him three months to understand it was a viable tool.
